If you can inform your guests about the chef’s special creation for the day (or an occasional treat), it should become their top choice. Since they can’t browse the menu for details, it’s up to you to paint a vivid picture of what’s being offered.

When your table chooses that special based on your recommendation, it means you’ve successfully sold it to them. The chef created it for this night only, and by telling your guests about it, you show you’re doing your part well.

If your chef appreciates these efforts, you might get some kudos for your excellent work. But if you’re in a restaurant where the kitchen doesn’t seem to care, it might be a sign that you’re not quite in the right spot yet.
